Craving Ellie in My Belly: Aromatic Beef Stew with Butternut Squash


CEiMB is Aromatic Beef Stew with Butternut Squash over whole wheat coucous. Kayte of Grandma's Kitchen Table is the host and a wonderful blogging friend! Kayte, I have never been a squash person and this stew changed my whole outlook on the vegetable. Squash is a vegetable isn't it?



I couldn't find just whole wheat couscous but there is a brand called Far East putting out a product called whole wheat couscous with roasted garlic and olive oil. The couscous package took all of 10 minutes from start-to-finish to assemble.

Wow that looks great...looking at them all again just makes me want to make it again, like today for example, it was that good! Love the fact that you now will eat some squash, which is, yes, a vegetable! We love squash and this was a happy place for it indeed. Thanks for being so enthusiastic about my pick, I love it when that happens. Especially when it is someone who has such great bloggy food over on her own blog!

That looks so good. Ted loved it. Next time, I'm making it with beans so I can enjoy it as well. I really like the addition of butternut squash. That veggie makes anything taste great.

Did not think I would like this, but the flavor was wonderful. And since I used the crockpot my kitchen smelled like an exotic spice market when I got home.
