Barefoot Bloggers Do....CURRIED COUSCOUS!
Barefoot Bloggers jumped in and played with couscous this week. Ellyn of Recipe Collector and Tester chose the recipe from The Barefoot Contessa Cookbook on page 94. Great Choice! You can also go to the Food Network site and find the recipe. I have never made couscous so easily in my life! I LOVE this recipe! Especially boiling a liquid and pouring directly on the couscous to steam cook by placing Saran wrap over the bowl. Ingenious. The idea is simple and I have no idea why I did not think of trying this before. Well, now we all know.
I changed the recipe just a wee bit by replacing water with chicken broth, adding an extra Tablespoon of butter because I had 2 Tablespoons sitting out on the counter and I used Craisins instead of raisins. Curry is not a spice that is used in my kitchen very often so the idea of making this dish was not making me jump for joy.
Result: The dish is versatile and can easily be the center of a meal. Adding any type of meat would not detract from the curried couscous. Easy and fast to prepare along with being colorful makes the dish one that I would share with company. Very tasty!
